- 1 lb ground beef (80/20)
- 2 tsp olive oil
- 1 small yellow onion, diced
- 2 garlic cloves, minced
- 2 cups beef broth
- 1 ½ cups egg noodles or rotini
- 1 cup milk (whole or 2%)
- 1 tbsp Dijon mustard
- 1 tbsp Worcestershire sauce
- ½ cup sour cream
- ½ tsp smoked paprika
- Salt and pepper to taste
- Optional: chopped fresh parsley, shredded cheese
Instructions
- In a Dutch oven or deep skillet, heat olive oil and sauté the onion for 2–3 minutes. Add garlic and cook another minute.
- Add ground beef and brown thoroughly, breaking it into crumbles. Season with salt and pepper.
- Stir in Dijon mustard, Worcestershire, paprika, and beef broth. Bring to a gentle boil.
- Add pasta and milk. Simmer uncovered for 10–12 minutes, stirring occasionally.
- When the pasta is tender, stir in sour cream and simmer 2–3 more minutes.
- Serve hot, garnished with parsley or shredded cheese if desired.

- Substitute ground turkey or plant-based meat for a lighter option.
- Add mushrooms or spinach for extra nutrients.
- For creamier texture, stir in ¼ cup cream cheese before sour cream.
